What’s cooking at your house?

First topic message reminder :

While watching the playoffs, I’ve been busy in the kitchen.

Made a huge pot of pasta e fagioli and there’s plenty left for lunches. Of course I omit the onion and don’t add celery as I just don’t like it, but a good sprinkling of smoked Spanish paprika is delicious. Serve it with some grated Parmesan and crusty bread and salad.

Second is banana and pecan bread. Pecans are a huge business in Arizona and just before Christmas is harvest time. I have a super lovely older lady patron who gives me a massive bag of freshly picked nuts as a Christmas present. They’re expensive so I’m grateful. I’ll probably make a pecan pie or pecan bars with the rest.

They do similar deals in other supermarkets Cass, but I don't think you can beat M&S because their food (and wines) are always of a pretty good standard.

I have to say though, and this is the truth, if I enjoyed cooking and cooked as well as you do, I would spend a lot less time and money buying foods that are already prepared, I would be cooking them from scratch. x

Hi Cass, well I have gone right off meat at the moment, just find it boring, so I feel like I'm running a restaurant, meat meals for Dad and OH, meatless for me.

Just tried a new recipe, Fennel, spinach and mushroom salad and a soy and honey dressing with a balsamic glazed onion, st agur cheese (soft blue cheese) and walnut tart. It was delicious.

Have to confess, I can make puff pastry but very rarely do, it just takes so much time, so the pastry is shop bought. I even have very up market recipe books that use it now!

Philly cheesesteaks with double Provolone cheese with tater tots.

Trader Joe’s does an excellent thing of thinly sliced beef which is perfect for this as well as beef Phō.

I don’t see why not. As long as it’s shredded. Mix it with panko breadcrumbs, garlic powder, herbs, smoked Spanish paprika. I smeared the chops with sour cream instead of egg then dipped and pressed into the mixture. It added a new flavor level.

Cheers Syl. I do love it. I read cookbooks for fun! I can’t sew or build anything to save my life so this is where my artistic energy goes. But hey, I appreciate frozen pizza and Aunt Bessie’s too. Nothing wrong with a good tuna fish sandwich either.

Mr. C puts brown sauce on most things and is one of the fastest eaters. He practically inhales it. He blames the military and his mother’s terrible cooking lol!

My OH eats very fast too, often he has almost finished his meal as I am just getting started.
He has never been in the military, so I can only assume he wants to get it over and done with quickly. Laughing

lol, being one of the youngest with very little food and older brothers, I had to wolf down my food. In oder to stop my brothers taking what was on my plate. Its a habbit I have never grown out of. Laughing

Its the survival instinct that is imbedded....men are so like wild animals in many respect. Razz

Very true of Mr. C too. He was the middle son. Plus in the military you are given a time in which to eat. If you’re at the back of the line, you throw it all down once you sit, because when times up, it’s up.

Low carb egg muffins

Just made a batch of these for breakfast on the go. You can use any kind of chopped veg, cooked meat, cheese and spices you want.

These have chopped ham, mix cheddar, garlic, smoked paprika, white pepper and mixed herbs.

Heat oven to 380

Spray 12 hole muffin tin

Put in your veg, meat and cheese in muffins holes

Blend
10 eggs
1/2 cup skim milk
Good dash of garlic and paprika powders
Good sprinkling of pepper
1tbsp or more of herbs

Pour into each muffin hole.

Bake for 20 minutes.

Can be stored in container in fridge for up to 3 days (but they never last that long).

If you mixed about quarter cup of Self Raising Flour into that you'd get a more rise and Soufflé like consistency.

Same Veya. I’ve made these egg soufflé type things too and added a little cream and flour. They rise splendidly.

For a low fat option you can whisk eggs and cottage cheese together and add some peppers and spring onion and bake. They are sooooo nice if you have them with a tomato, red onion and spinach side salad with sticky balsamic dressing for breakfast.

Sooooooooo. No home cooking tonight. No siree. Me and him celebrating 28 years of not being thrown in jail...sorry...wedded bliss...or something like that. So anyhoos we went to a great local place and the cook is fantastic and created a menu for me without onions. We shared a starter that had lobster tempura, baked Brie, roasted apples with caramel sauce and mini beef Wellingtons, followed by a lovely salad including fresh asparagus, then Alaskan halibut on cheese polenta with broccolini then to finish a trio of s’mores bread and butter pudding/cheesecake/chocolate truffles.

OH MY GOD. It was delicious. Plus had almost a whole bottle of prosecco as he drove. Going back for brunch tomorrow morning. I will remember to take pictures this time!
