What’s cooking at your house?
First topic message reminder :
While watching the playoffs, I’ve been busy in the kitchen.
Made a huge pot of pasta e fagioli and there’s plenty left for lunches. Of course I omit the onion and don’t add celery as I just don’t like it, but a good sprinkling of smoked Spanish paprika is delicious. Serve it with some grated Parmesan and crusty bread and salad.
Second is banana and pecan bread. Pecans are a huge business in Arizona and just before Christmas is harvest time. I have a super lovely older lady patron who gives me a massive bag of freshly picked nuts as a Christmas present. They’re expensive so I’m grateful. I’ll probably make a pecan pie or pecan bars with the rest.

My partner is a veggie. We do not, however, choose to live together 24/7.
Hence, on this glorious evening, my own dinner will be gourmet pork sausages from the local farm shop, mashed potato...and lots of fart-inducing brussels sprouts

Mr. C was out playing his game with sticks getting beagles or whatever they’re called, so I treated junior and myself to a posh breakfast while we watched the footie. Made eggs in a bagel hole and had some smoked salmon and caviar with it. Trés yummo. Got proper NYC style bagels from the Jewish deli when up visiting senior.

Once upon a time long ago maybe. Mr. C had a plan to do a B&B and an evening meal. Yeah no. But it’s incredibly hard work and you really don’t ever get any time off. I think I would lose my love for cooking if I did that. I love reading cookbooks and blogs for fun but wouldn’t for work.

Tonight we had pan fried steak, mushrooms Eddie, jacket potatoes, roasted broccolini and carrots and HALLOUMI. All hail the halloumi. I could eat packets of this just by myself.
Tomorrow is bay scallops in a lemon caper wine sauce over orzo pasta and steamed asparagus.

I would love an invite to tonights meal. In Wales we used to go to this great little bistro that sometimes had scallops on the menu, delicious.

A few meals from this week. Homemade Swedish meatballs in a mushroom sauce served over mashed potatoes.
A baked fish gratin served over forbidden rice. The sauce is made from a German packet mixed with cream which I got hooked on many years ago when we lived there. It’s lush. You pour it oven fish (in this case some nice thick cod fillets) and bake.
Tonight is sushi takeout

I haven't had small scallops like that, I bet they are delicious.
Your meals look like restaurant quality Cass....I am in awe.
My poor OH would think he had died and gone to heaven if he was presented with such culinary delights at home.

Tonight it’s a take on tandoori chicken. Since I don’t have a tandor oven, I’m baking them at high heat. The filets are marinating in the fridge and the smell is lovely. Will serve with coriander and cardamom flavored basmati rice and garlic naan and a small salad of avocado/tomato/cucumber dressed with lime vinaigrette.

I don’t know if anyone else cooks this, but I loved mashed celeriac and cauliflower. Mashed until creamy with lots of butter.

Yeah baby! Last night's dinner was that mash with pan-fried basa, my new favorite fish, along with fine beans, asparagus and fresh peas. It was fan-fucking-tastic and obviously a nice healthy meal as well. And now I know enough about cooking that I'm sure I could make it as well, which makes me feel like such a big boy

I still find the smell of most fish really off-putting, and I don't think it's unreasonable to not want to eat something that you don't like the smell of.

Didn’t do a lot of cooking this week. Very worn out tying things up at work and saying goodbye to do-workers and patrons.
But this three cup chicken served over steamy rice was to die for and actually didn’t take too long. I steamed some broccoli florets and baby carrots separately and added them at the end to soak up the sauce.

Celeriac is lovely. I’ve cooked with it for years. It’s obviously related to celery (which I don’t like much). I love mashed celeriac with cauliflower. I could just eat a bowl of that on its own. It’s so earthy.

Maybe it’s also the crunch factor? I’m not big on crunchy vegetables.
Maybe I have to try it with something else. Took mashing Swede with carrots to get me to like that.

I hear you! Celery is something I like cooked, in stews and bolognese, but raw? Ugh! Celeriac is much less yucky, more earthy.
Really weird you should mention swede and carrots as I nearly made that for dinner tonight.

Celery is part of the holy trinity for Cajuns.
But I'll admit that's about the only thing it's good for.

Yup. And I’m back there after Mr. C picked it up because the order was messed up and half of it missing. He was content to leave it. Me not so much since it was my meal that they screwed up.

Sticky chicken with mushrooms and soy roasted carrots and broccolini served over Japanese sticky rice.
Sauce is made with local honey, soy sauce, dark soy sauce , garlic, ginger and balsamic vinegar. Roasted the carrots and broccolini in sesame oil and soy sauce. Trés yummy and no leftovers except rice. Will make a prawn and veg egg fried rice tomorrow night.

So it’s been a day, week, month. New job, long hours, trying to plan a few major events and reopenings for my library and senior center and pool and community center
all at the same time. I’m loving it but it’s hard to do it piecemeal and I’m coming home tired and hungry. Sadly Mr. C doesn’t cook apart from frozen foods or toast.
I present to you what was supposed to be shrimp and broccoli fried rice. Well the shrimp was bad when I opened the bag. The only other meat I had defrosted was pancetta. So I cooked tomatoes in the wok, added in the pancetta, so tired I forgot I had already put ginger in with the garlic and cracked an egg straight into the wok instead of with the other beaten eggs in a bowl. Managed to spoon most of that egg out. Continued cooking till pancetta and tomatoes were cooked, threw in the now steamed broccoli and the leftover rice. Had no idea where I was going with this so I threw in some splashes of Maggi seasoning, a bit of cream then took it off the heat and grated fresh Parmesan and black pepper over it.
It’s very very good actually. Mr. C has just had seconds and finished it off. What to name this, this thing? Suggestions welcomed.
