What’s cooking at your house?
While watching the playoffs, I’ve been busy in the kitchen.
Made a huge pot of pasta e fagioli and there’s plenty left for lunches. Of course I omit the onion and don’t add celery as I just don’t like it, but a good sprinkling of smoked Spanish paprika is delicious. Serve it with some grated Parmesan and crusty bread and salad.
Second is banana and pecan bread. Pecans are a huge business in Arizona and just before Christmas is harvest time. I have a super lovely older lady patron who gives me a massive bag of freshly picked nuts as a Christmas present. They’re expensive so I’m grateful. I’ll probably make a pecan pie or pecan bars with the rest.

Well, this morning I made eggs. As I was making them I realized I didn't have any bread. But I remembered that I threw away two heels yesterday. They were still in the bag and on top of the trash, so I did what any self respecting bachelor would do and ate them with my eggs.

I don’t eat the heels either but Mr. C does. He’s like wait there’s some left and I’m like no there’s not. If I make Home made bread then yes I’ll eat the outsides. The outside bits are only good on casseroles, meatloaf and brownies. Crunchy!

That pasta dish looks great. Unfortunately, unless Becky has her kids over, all such recipes are too much to store. I end up throwing them out.

As it happens, I love eggs in the morning but Ben didn't buy any so pfffffff....had to have cheese.

Are heels what we call crusts?
I was told when I was a kid that eating them made your hair curl...I still eat them and I still have curly hair.

Tonight we had mashed sweet potato, mini meatloafs with a tomato balsamic glaze, mushrooms cooked in butter and Marsala wine and garlic powder and green bean/asparagus almondine.

I let mine soak for 12 hours changing the water frequently. Helps cut down on the salt.

Syl get some baby new potatoes with the skins on olive oil, garlic and pepper and roast them in the oven.
Season some smoked salmon
Fry up some garlic, kale, red onion, red peppers, mushrooms, baby tomatoes, long stemmed brocolli, thinly sliced courgette and season it all with smoked paprika and parsley - at the last minute throw in some pine nuts.
Chuck the potatoes on the plate shove the veg on top and scatter the salmon.
Soooooo nice. When I'm in the mood for fish on the rare occasion this dinner is fab. I do substitute the salmon for quorn fajita strips mostly.

That sounds delicious. I love fish, but as I am the only on in the house who eats it, I tend to either eat it cold, smoked salmon, bought cooked prawns etc, or just bake it in white wine and lemon juice. I am very good with a salad though.
I do make an effort about 3 or 4 times a week to cook properly for OH and myself, but sadly I never produce anything worthy of posting.

If I cook for both of us I often use chicken.
Easy recipe like diced chicken stir fried with peppers, onions, mushroom, olive oil, white wine and loads of black pepper. If you fancy something thicker add cream for the last couple of minutes.
I call it my 'peppered chicken dish'....just to impress.
You can serve it with rice, chips, pasta, anything really.

I've never tasted curried chickpeas.

One of my favourite concoctions is tinned tuna (proper tuna not that cat food sloshy shit) with West Indian hot pepper sauce on it, olives, boiled eggs with salad cream, hummus and crackers.
Don't eat tuna anymore now though.
When we ate in the vegan restaurant they sold tins of "toona". I meant to buy some. I can't remember what it was made out of I'll have to ask Ben.
Oh! And their cheese is made from cashew nuts and is fucking awesome.

I prefer tinned tuna (steak) to fresh tuna which can sometimes be a bit dry....bit like tinned red salmon is just as delicious as fresh, smoked or poached salmon.
My mum used to call tinned salmon proper salmon.

You got to have a raw middle for a proper tuna steak to be melt-in-the-mouth tasty. Otherwise, like a meat steak, it's overcooked.

Hahahahahahahaha. The only thing you need to pretty much "overcook" to a small extent is white meat - chicken and pork - take any meat or fish out just before I it seems done, and remember that it still cooks about minute after you put it on your plate.

Sounds yummy.
Try parboiling the potatoes a bit first then put on baking sheet and slightly smash them down before putting on the garlic and seasoning. Also a bit of smoked Spanish paprika would be great here too.

When we go to our favorite Vietnamese restaurant, Mr. C gets a side of fries and I will ask for some peanut sauce and dip it in that. Sooooooo good. Goes very nicely with my bacon and egg fried rice that the owner cooks fresh.
Fried pickles. But I love proper kosher dill pickles anyway. Eds did you try them over here? Again soooooo good.
Deep fried peanut butter and jelly sandwich but only once a year when the fair comes around.
