What’s cooking at your house?
First topic message reminder :
While watching the playoffs, I’ve been busy in the kitchen.
Made a huge pot of pasta e fagioli and there’s plenty left for lunches. Of course I omit the onion and don’t add celery as I just don’t like it, but a good sprinkling of smoked Spanish paprika is delicious. Serve it with some grated Parmesan and crusty bread and salad.
Second is banana and pecan bread. Pecans are a huge business in Arizona and just before Christmas is harvest time. I have a super lovely older lady patron who gives me a massive bag of freshly picked nuts as a Christmas present. They’re expensive so I’m grateful. I’ll probably make a pecan pie or pecan bars with the rest.

I had to use up some potatoes, sour cream, heavy cream and cheese that was about to get mean. I found a recipe on the New York Times Cooking app called Sweeney Potatoes. Oh my. Not for the weight conscious.
Served with steamed asparagus, marinated steak tips (a riff off of Trader Joe’s) and mushrooms cooked in butter, olive oil, Marsala wine and Penzys roasted garlic powder and bonne herbs. These mushrooms are hereby called Eddie’s Mushrooms.

Treacle Sandwiches are great, butter the Bread,spread on thick layer of Treacle. Have a cup of Tea with it, watch out for Treacle oozing out on to your Hands ! When it does, my Cat licks it off !

Yup! I had potatoes left from last weeks delivery where I made roast potatoes for Sunday roast (buy duck or goose fat. You’re welcome). Using up the rest tonight in my first attempt at home made gnocchi with spinach and diced slab bacon. Sour cream and cheese were left over from using up leftover chili pie and a smothered chicken dish that was new. I was like it’s ok but Mr. C loved it. And the cream I used for pancetta pasta, a kind of bastardized carbonara that I usually make a couple times a month. And I always get 2-3 things of mushrooms every week.

It’s all about planning. Here’s this week’s menu:
I’ll be at my library Mon-Wednesday doing a lot of weeding and cleaning so I want something I can come home to or is a damn quick item. Thursday and Friday I’m working from home so I have more time. As on Sunday. Saturday is always take away night. If I feel tired or just don’t want to cook, there’s always options in the freezer or cupboard.
With things the way they are right now and with grocery pickup being advanced, I made a list of my freezers recently, (will do one for pantries today) and what’s in them. So when I do the meal planning I know what I have and what I need to get (mostly fresh stuff like milk, eggs, fruit and veg). It comes from Mr. C’s military days when he would be away overseas and I had 2 small kids and didn’t want to drag them round the supermarket looking for inspiration.

So instead of Mac and cheese with the leftover Christmas ham, I had some leftover rice from last night’s curry and mushrooms from the gnocchi. So Japanese fried rice with all the leftovers and some frozen veg. I sautéed the mushrooms in butter, soy and mirin first. It made dinner tonight and lunch for Mr. C tomorrow and no waste!

The secret for this rice is to use kewpie mayonnaise. You mix it in the warmed up rice and then put it in the wok. Unami bomb.

I’m hungry now though so Ben has put in a pizza.
I cannot ever say no to a cheese pizza. Needs black olives though.

Ohhh fish pie. We have haven’t had one for a while. Mind you we are having baked fish and couscous tonight.

Here’s the fish, tilapia. You cut up cherry tomatoes and pour over 2 tbsp olive oil, 1 tablespoon red wine vinegar, 2 minced garlic cloves, 1 tsp honey and s&p. Roast for 15 minutes at 200c/400f then did the fish in the middle. I brushed on olive oil, pepper and a seasoning mix and lemon zest on the fish. Baked for about 10-14 minutes depending on how thick your fillets are. The tomatoes were to die for.

Yum. I had cut chicken breasts, with fresh cut string beans and pasta shell, with a simple white cheese sauce. Simple, easy and quite good.

I bet if you sat in the garden eating that dish, a warm sun on your shoulders, close your eyes and you could be in you favourite holiday destination anywhere in the world.
I should be in GranCanaria right now....I might try something like this when the sun comes out again.

Sounds yummy!I love love love fresh string beans. My favorite way is to sauté them with chopped bacon and lots of fresh ground black pepper.
Tonight is baked scallops with sautéed broccolini and buttered egg noodles and some roasted carrots.

It’s sunny and HOT here already I’m sorry about your trip. So many friends have had to cancel their trips. It sucks.
Here’s the recipe so easy. I have a bought spice blend that I sprinkled on the fish and I put lemon zest on the fish before it went in and sprinkled tarragon on when it came out.

I'm in charge of the mash for our shepherd's pies around here, I often will grate up a little cheddar and put it on top, then toast it under the grill. It's one of those little things I take pride in
Since the lockdown, eddie has taken over cooking dinners and has thoroughly demonstrated her superiority over my cooking. I can get us fed, but that's about it!
I do make a mean bacon & egg sandwich, though
