New Year Recipe
This is a traditional southern dish that my grandmother made for every New Years Day. It is supposed to bring you good luck for the year.
You can add or subtract ingredients as you wish. I put in cooked sausage meat along with the drippings instead of ham or bacon, add a can of diced tomatoes (especially the kind with green chilies), fresh garlic and take out the onion, celery and bell pepper. I also use a ready made low salt Cajun seasoning but you can google how to make that.

Here was the final version along with some hot crab dip I made to take to a friend’s house for a New Years Day gathering.

I made Caldo de Res on New Years, but Cajun food is some of my favorites.

I love onions. The holy trinity of Cajun food is celery, onions and bell peppers. All Cajun food has onions.

Yes. And leeks and shallots and spring onions etc...I can tolerate low levels of onion powder. I’m beginning to find I can’t tolerate as much fresh garlic as I used to (same family) as well as higher levels of onion powder. Not quite at having to carry an Epi pen though I can see it getting worse.
I’ve been a bit blah since New Years Day when I inadvertently ate some. My friend assured me that there were no onions but she didn’t read the label of the BBQ sauce she used. Not her fault but I’ve not been well. Will spare everyone the gory details. I think there was some in one of the dips too.

Yup. When we lived in Europe, it was the first word and phrase that I learned in 5 languages!
For years my mother in particular didn’t believe me. She thought I was making myself throw up...until she met adult friends who happened to have the same allergy. Then she believed! Hmph.
It’s why I avoid chain restaurants unless they’re steak houses or something like Red Lobster. Applebee’s is the worst for onions in everything and Olive Garden, besides being pre-made crap that’s warmed up.
Everyone thinks that you can’t cook without onions. Oh yes you can. You just add in more garlic or herbs. I’m a great cook. Basically it’s just a filler in a lot of things. Funnily enough, both the juniors now love onions as grownups.
Now let’s talk Chili. With or without beans?

weirdo. I’ll take mine with or without frijoles, depends on my mood. No offense to anyone from Britain but Aggie, it would damn well break your heart to see what they put in their so-called chili con carne. For years I would get looks when I shouted out, that’s not real chili.

Yes a lot! And It’s also why I try and hide my phone if I’ve had a few too many glasses of bubbly cause apparently I get very gobby. I dispute that.
