The defender has a great defence which is to try and isolate the arm whilst keeping his body out of the way.
I once did an unarmed combat course and knife use was done every morning.
They taught us that no matter no good you are or think your you, in a knife fight you are getting cut to ribbons, even if you are successful in defending and survive, you will be in tatters.
They used these plastic knives with lipstick along the edge and we trained without shirts, every single person including the attack was covered by the end of the session
Ultimately the Best defence is to run like fuck
