Mustard and ketchup

First topic message reminder :
What a really great combination! Great on veggie sausages in a brioche bun.
I'm a bit of a condiment girl and love sauces and pickles in a sandwich. Ketchup is a great invention - I will want to shake Mr Ketchup's hand one day - and ketchup goes great on fried eggs. Ben had a jalepeno ketchup that I had consistently every morning on eggs - must find it here.
What's your condiment of choice?
Oh, and I have to give mayonnaise a mention. Great with chips. Oh yeah.

Balsamic vinegar for salads.
Tartare for fish (oohh yum!)
Any hot sauces for meats - habanero, horseradish, mustard ..
Ketchup? - bored witless with it if I'm honest.
