I have spread butter onto bread and toasted this and made a cheese sarnie

This is the most amazing veggie dish ever. Really tasty. Thai based Quorn meatball with fresh lime and coconut.
Ingredients
300g Quorn Swedish Style Balls
3 tsp Cooking Oil
1 tsp Coriander powder
1/2 tbsp Cardamom powder
1 tsp Turmeric powder
1 tsp Cinnamon powder
20g Red Chilli, finely sliced
½ tsp Lemongrass paste or fresh crushed lemon grass stalk
1 Tbls of smooth peanut butter
1 knob Ginger, sliced or grated
450 ml Vegetable stock
400ml Coconut milk
1-2 Limes (use more or less depending on taste)
Salt and freshly ground black pepper
2 Spring Onion, Chopped
2 tbsp Coriander, Chopped
3 tbsp Coconut Flakes
Method
Fry Quorn Swedish Style Balls, with 1 tsp of oil, for 15 mins, until browned.
Heat up the remaining oil in a pot over medium heat. Add coriander, cardamom, turmeric, cinnamon, chilli, lemongrass and ginger. Stir well.
Pour in vegetable stock and coconut milk. Reduce heat and simmer for 5-8 minutes, until mixture thickens.
Add the Quorn Swedish Style Balls to the pot.
Add the zest and juice of limes, to taste, and simmer for 5 minutes. Then stir in peanut butter to further thicken.
Season with salt and pepper, to taste.
To serve, ladle the Quorn Swedish Style Balls into a bowl and pour over the broth.
Garnish with chopped spring onion, coriander, and coconut flakes.

This is one of my gluten free dishes that people eat and go into raptures over. Greek Meatballs in Tomato sauce.
Lamb mince
large handful of Porridge Oats
Chopped Onions
Fresh Mint
Celery Salt
Black Pepper
1 Egg to bind
Sauce
Sliced fresh Garlic
Tomato Puree
Cinnamon Stick
Black Pepper
Put Onion and mint into food processor and blitz. Add mince and oats and celery salt. Blitz. Add egg. Blitz. Mixture should be like pate. Roll into balls.
Fry cinnamon stick and garlic in olive oil til brown at edges. Add tomato paste and fry. (Italians ALWAYS fry their tomato paste....it enriches the flavour). When paste has turned dark red, add water and then meatballs. Add pepper to taste. Simmer til cooked and sauce has reduced and thickened.
Serve with boiled rice or sauted potatoes.
