Get koselig with Norway’s best winter food and drink
Forget seasonal blues, winter food Norway style is a time of indulgence. So settle in, serve up and get koselig
As a ghostly winter twilight settles over the fjords and snowfields of northern Norway, you might think the locals would reach for a packet of Prozac or a bottle of aquavit and wait grimly for spring. But you’d be wrong.
Whatever the season, Norwegians are among the world’s happiest people. An American academic spent a year in Tromsø to discover why seasonal depression is so rare there. Time and again she got the same response: “What do we have to be depressed about?” People said they looked forward to winter as something to be enjoyed, not endured.
Sustainability, organic, farm-to-fork and fisherman-to-fork have become Norwegian cooking watchwords
Long, cold evenings are a perfect excuse for being koselig. Hard to translate (“cosy” and “snug” scarcely do it justice) koselig means warm and generous and companionable and a hundred other nice things. It’s when cafés offer you a blanket or sheepskin so you can linger outside and watch the Northern Lights. Or shops are lit with candles. Or complete strangers in a ski hut share a flask of hot chocolate with you.
Restaurants are koselig places. Norway has always produced terrific fresh ingredients – not just fish but lamb, reindeer and venison, berries and mushrooms, plums and cherries, honey and milk, nurtured by clear mountain streams, slow-growing coastal pastures and cool, unpolluted air.

Norwegian cooking used to be bland and a bit of a joke (like Britain’s). But in recent years there’s been a culinary revolution (like Britain’s). Sustainability, organic, farm-to-fork and fisherman-to-fork have become watchwords. Norway got its first three-Michelin-star restaurant in 2016. There are hundreds of microbreweries, and Norwegian coffee roasters win international awards.
Wintry weather doesn’t keep Norwegians indoors either, and thanks to the Gulf Stream temperatures near the coast are usually bearable
Take a Hurtigruten ship on a magical, 12-day voyage through Norway’s snow-bright winter landscape, often under the glow of the Northern Lights – and you can enjoy a different menu of fresh local ingredients every day in Norway’s Coastal Kitchen. Most towns on the route have a fresh fish market (the big ones in Bergen and Trondheim are well worth visiting) and winter is the most abundant season for many species.
Cod is king, as adult fish return home from the Barents Sea to spawn from January to April. They’re meaty, lean and tender, delicious as mølje (Arctic cod with liver and roe) and clipfisk (salted cod), while the annual World Cod Fishing Championship on Lofoten in March is an excuse for a proper koselig knees-up.
Røkelaks (smoked salmon), rakfisk (fermented trout) and monster king crab may all be on the menu, along with local game such as moose, grouse and reindeer. And make sure you sample other Norwegian staples such as lefse (flatbread) with Jarlsberg cheese, pinnekjøtt (cured lamb, often from Lofoten), and brunost (sweet, caramelised goat’s cheese).

Wintry weather doesn’t keep Norwegians indoors either, and thanks to the Gulf Stream temperatures near the coast are usually bearable. They can’t wait for the start of the skiing season, whether that means whooshing down crowd-free runs or seeing the Lyngen Alps bathed in emerald and crimson by the Northern Lights.
Cross-country skiing, hiking and sledding are popular, especially since Norway’s right-to-roam laws allow virtually unrestricted access to most coastline, forests and mountains, plus farmland when covered in snow. So take a matpakke (packed lunch) and a flask of award-winning coffee, strap on some skis, and see who you meet.
The Norwegians have a word for this, too: friluftsliv, living life in the open air. But beware. It’s catching. You may never be miserable in winter again.

I’ll pass on the skiing but say yes to all the food except the deer. Not a big fan of venison.

And the problem with deer here, is that the hours right after shooting it determine what it tastes like, and many hunters don't know what the hell they are doing.

I understand. I had it a few times in Scotland and Germany as well. Just not my taste. Neither is Boar. Too gamey. Same with pheasant although I like quail.

On the other hand their tattie scones, smoked salmon, regular salmon, square sausage, kippers, plain bread, Scotch eggs, crowdie, Lanark Blue, shortbread, scotch pies etc...are outstanding!

I’ve tried different varieties. I dunno I just can’t stand it. Same as calamari or octopus and I love most fish.

Anyway I meant to also say that this is similar to the Danish Hygge and Swedish Lagom.
