Re: Choice Of Christmas Fare
My mum used to buy a capon every Christmas.....I'm sure way back then they were a cheaper option that turkey.
I don't like turkey anyway...it's too dry. I buy a large chicken breast for each person and do those with all the trimmings....no waste, no mess, and you are not trying to use leftovers three days later.

I don't eat meat either magica. I do buy either veggie sausages or last year, I bought a (very expensive M&S) mushroom plait type thing.
It was soggy but it did help soak up the copious amounts of brandy I had unwittingly drunk.

Same up here...
Turkey seems to have become the 'traditional' Christmas lunch here in Oz...
Plus, considering it's summer over here, salad vegetables, cold meat cuts, fruit salads and the likes, are also quite common over the Christmas and New Year period.
With lots of leftovers and snacking from Boxing Day onwards..

Re: Choice Of Christmas Fare
I think I've only tried kangaroo meat once, maybe twice...
Nice enough, lean low-fat fine textured flesh; negligible cholestorol/HDLs..
Mostly sold as pet food down here; kangaroo prepared for human consumption is more often sold as a premier line, in deli's and restaurants..

I eat roo regularly and to be honest Steaks of it are not great.
Like venison gets tough easily, and also it is hard to get a good steak cut from the animal.
My recommendation is cook it like a rabbit,
Casseroles and slow cooked are the way to go.

I'v tried Squirrel, not too bad, Had a go at Hedgehog, cooked wrapped in clay and buried in the hot embers of a fire. When you peel off the clay, spines and skin come off with it

My son really liked the kangaroo steaks when he visited Oz this year.
He's a big meat-eater Andy he loves fresh fish and shrimp etc, so your food was right up his street!

Re: Choice Of Christmas Fare
One of the farms where I have one of my bee yards/apiaries is owned by a couple/family who are a mid-sized supplier of top shelf cuisine like fine meats (e.g. crocodile, buffalo, kangaroo, venison, baby veal..) and game birds (e.g. pheasant, partridge, pigeons, quail..) to restaurants, delicatessans and caterers..
IF ever need be, I might be able to source some of those for myself straight from the wholesaler -- if I ever felt like having a classy dinner for some special reason some time...

Re: Choice Of Christmas Fare
Best christmas dinner ever was a goose cooked really slowly, pricked all over so the fat came out (cooked it on the oven shelf with a big mettle container underneath) and I made cherry and kirsch sauce to go with it. There wasn't a scrap left.

Re: Choice Of Christmas Fare
Went Goose shooting on the Wash once with friends and my Labrador.
Shot a Pinkfoot goose that came down the other side of a water filled creek. it was in January and was Snowing. Sent Prince, the Lab after it.
He put one paw in the water, looked at me as to say "i'm not going in there it's bloody freezing, and went back and sat on the sea wall.
Did I feel a prat? in front of my friend who's Lab went in with out hesitation. I gave him the goose !

Re: Choice Of Christmas Fare
Our lab will break the ice on a river to get a swim in. We take him up the road to Hunstanton and at the moment it's flippin freezing, dives in the sea without a moment's thought. We have stopped throwing a ball into the sea for him though as he gulps water bringing it back and it gives him a dose of the runs and all that salt isn't good. There aren't many fresh water places for him to swim in round here, which is a shame as he simply loves it.

Jesting of course. (For the hard of thinking, who might assume I'm being serious).
I often give flippant replies in threads. My dubious sense of humour just cannot be tamed.
